Nasi Lemak

I am sorry that I was on long holiday and now I come back and will share more recipes with you :)

We lived in Singapore for 9 years and this food is very familiar for us. I can't find any nasi lemak just like what we had in Singapore back then. This make me came up with this idea.
When I told my husband that I plan to make Nasi Lemak, he told me that he wanted the one that is served with fried fish and dried anchovies. 
Here is the one that I made for him and my boys and also my friend! 
I can't find the same fish like what we had in Singapore but  this yellow corvina works well with Nasi Lemak. 
So please find the recipe below: 

Nasi Lemak 
Nasi Lemak Ingredients: 
  • 4 cups rice 
  • salt to taste
  • 200ml coconut milk
  • water
Nasi Lemak Methods:
  • Just like making steamed rice with rice cooker, rinse your rice and drain.
  • Add the coconut milk, a pinch of salt, and some water.
  • Cook
Fried Yellow Corvina: 
  • 6 Yellow Corvina Fish (clean and sprinkle with lime juice - From the real lime)
  • 2 tbs coriander 
  • salt 
  • 1 cm galangal 
  • 5 cloves garlics
  • cooking oil
  • Grind/ puree coriander, salt, galangal, garlics and water. 
  • Marinated fish with the pureed ingredients for 15 minutes. 
  • Heat the pan, add cooking oil and deep fried fish. 
  • Put aside. 

Dried Anchovies and Peanut
  • 1 pack of dried anchovies
  • 100 gr ground peanut
  • salt
  • cooking Oil
  • Heat the pan, add cooking oil, fry dried anchovies until it dry. Put aside.
  • Heat the pan, add cooking oil, fry ground peanut until cook. Put aside
  • In a bowl, combine dried anchovies and ground peanut and sprinkle with little bit of salt. 
It's not that difficult, isn't it? You only need more time in preparation!
